• 2 cups of quick oats
  • 1/2 a roasted sweet potato
  • 2 Tbsp ground flax seed
  • 2 Tbsp chia seed
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/4 cup maple syrup
  • 1/4 cup of REAL peanut butter*
  • 1/4 cup coconut oil, melted
  • 1/2 cup of semi-sweet chocolate chips, melted (or mixed in)


Mix the oats, flax seed, chia seed, cinnamon and nutmeg (and chocolate chips if mixing in), set aside.

Mix the sweet potato, maple syrup, and coconut oil. Add the dry mixture to the wet mixture.

Line a baking sheet with parchment paper and place the mixture on. Shape the mixture into a square, patting it down so that it may have the thickness of a granola bar.

Bake at 350 degrees F for 25-30 minutes.

Leave the granola to cool for at least an hour. While granola is cooling, melt the chocolate using a DIY double boiler method you can quickly learn here.

When the chocolate is melted, using a spoon, swivel the chocolate over the granola and let it solidify. Store in an airtight container for up to two weeks
