Either to grab as a snack or breakfast, this easy pomegranate chia seed pudding should always be in your fridge. This is so good, I even serve it for dessert sometimes!
- 1 ½ cup unsweetened almond milk
- ½ cup chia seeds
- 2 Tbsp maple syrup
- 2 tsp pure vanilla extract
- 1 pomegranate, de-seeded
De-seed pomegranate. Unfamiliar with how to do so? Check out this quick video. Refrigerate seeds in an air tight container.
Mix all ingredients, except pomegranate, in a bowl and whisk together quickly for about five minutes. Mixture will become frothy. Either with plastic wrap or a top, cover mixture.
Refrigerate mixture for 24hrs if you prefer the pudding a little runny or 36hrs if you prefer a more solid pudding.
Once the chia pudding is at your desired consistency, scoop some into a jar, then add pomegranates, then add more chia pudding on top, then top off with more of the fruit seeds.
Serve immediately or refrigerate for the next day.
