Grilled Jerk Chicken Salad with Mango Avocado Salsa has been made every other week in this house.
I had tried a few store bought jerk sauces in the past and they were all a big letdown. So when I went to make my own, I used similar ingredients to the store-bought sauces but mine had a good amount of molasses added to it. One day, I’ll re-make my homemade jerk sauce and write it down but until then, here’s my cheat sauce.
Walkerwoods Jerk Sauce (Hot + Spicy) is the only store bought jerk that didn’t let me down. So I combine that, with some molasses to make my quick jerk sauce.
Is Jerk Sauce Sweet?
No but molasses adds a subtle sweet profile. I’ve seen brown sugar added to some recipes but I prefer molasses. It’s really helps bring out the other flavors in jerk sauce. It also thickens the sauce, and the sugar from the molasses helps get a nice caramelized crust on your chicken. I also love adding this sauce combo to my Oven Baked Wings.
I add my cheat sauce to the chicken the night before so the flavor really seeps into the chicken. The sauce can be made days in advance though because it will stay fresh in the fridge.

What to Eat with Jerk Chicken?
I love cooking jerk chicken breasts and then slicing them up and adding it to a simple salad, alongside my mango Avocado Salsa (recipe below!). It’s so refreshing and has so much flavor, a perfect summer meal.
Typically though, jerk chicken is served with:
- Rice and Peas
- Plantains
- Coconut Rice

Grilled Jerk Chicken Salad with Mango Avocado Salsa
Equipment

- Meat Thermometer
Ingredients
Jerk Chicken Marinade
- 1 tbsp Walkerwood's Jerk Seasoning (Hot + Spicy)
- 1 ½ tbsp Molasses
- 1 tbsp Avocado Oil or Extra Virgin Olive Oil
- 1 lb Chicken Breast
- 1 tsp Salt + ¼ tsp Pepper
Mango Avocado Salsa
- 1 Cup Mango can use fresh or frozen that's been thawed
- 1 Avocado diced
- ½ Cup Parsley, chopped Cilantro would typically be used but I hate the taste of it
- ¼ Cup Red Onion, chopped
- 1 tbsp Fresh Lime Juice
- Salt and pepper to taste
Instructions
For the Jerk Chicken
- Mix the Walkerwoods, the molasses and oil together. Set aside.
- Clean your chicken. Then pat it as dry as you can with paper towel. Season the chicken with the salt and pepper. Then add the above mixture to the chicken, rubbing it in.
- Place the chicken in a bowl and cover with plastic wrap. Refridgerate overnight or a couple hours before you plan on grilling.
- When ready to cook: Preheat the grill until the temp is around 400F. Make sure to oil the grill so the chicken doesn't stick.
- Grill the chicken for about 5 minutes on each side. This really depends on how thick the chicken breast is, so use your meat thermometer! You want the chickens internal temp to be at 165°F. I take the chicken off at around 155°F because when you remove the chicken, it will continue to cook for a few minutes, raising the temperature of the meat.
- Allow the chicken to rest for a few minutes (this helps keep the chicken juicy so don't skip this!).
- Assemble a salad, eat alongside the Mango Avocado Salsa and enjoy!
Mango Avocado Salsa
- Gently mix all the ingredients in a bowl and add a little salt and pepper to your liking. Refridgerate until ready to use - it'll stay good in the fridge for 2-3 days.
