Blistered Shishito Peppers are one of my favorite appetizers!
Shishito Peppers are a bright green, East Asian pepper. Some people say they’re mild but I think they’re on the same sweet level as bell peppers. Beware though – there’s usually 1-2 spicy peppers in every batch. They’re such a good dish alongside a good steak, so when I saw them for super cheap in H Mart, I had to grab some.
Where to Buy
As I mentioned, I saw these at my local H Mart ($2.75 for a half pound!). A quick Google search will let you know if you have an H Mart or an Asian grocery store close to you. They’ll more than likely carry Shishito’s. I’ve heard some Trader Joe’s carry these too.
Shishito Peppers on the Grill
We’re in the middle of a heat wave so I’m utilizing our grill to cook these Shishito peppers. I coat them in a little ghee, toss them on the vegetable grill rack and let them blister, turning occasionally, and then finish them with a bit of coarse salt. I highly recommend to cook these on vegetable grill rack, so they don’t fall through the grates!
Shishito Peppers in Cast Iron
If you don’t have access to a grill, these cook great in a cast iron skillet too. Use the same method from above: toss in ghee, toss in skillet and turn occasionally, finishing with a little salt.
Dipping Sauce
I love heat so I made this spicy dipping sauce to go with the peppers. It’s improvised of fridge scraps so it’s real easy to make. The dipping sauce has:
- Sour Cream
- Mayo
- Lime Juice
- Adobo sauce from Canned Chipotle Peppers
Just mix it all up and you’ve got a spicy, tangy, dipping sauce.
Do You Have to Cook Peppers?
So I’ve read that you do not need to cook these but I have not tried them raw. If you do plan to cook these though, I would recommend cooking just enough so there are no leftovers. These don’t seem like a dish you’d want to reheat.

Blistered Shishito Peppers
Equipment
- Grill with a Vegetable Grate
- Cast Iron
Ingredients
- ½-1 lb Shishito Peppers they're labeled "sweet peppers" at H Mart
- Ghee or melted butter
Adobo Aioli
- 2 tbsp Sour Cream
- 2 tbsp Mayo
- 1 Wedge of Lime Juice
- 1-3 tbsp Adobo Sauce*
- Water, to thin sauce
Instructions
- Rinse your peppers. Coat them in ghee and then place them on the vegetable grate or cast iron, turning occasionally as they blister. Should take a 2-4 minutes to finish.
- Toss with salt and serve.
Adobo Aioli
- Mix sour cream, mayo, lime and the adobo sauce together. Add water to thin if needed and serve alongside the peppers.
